Have a Sunny Day

Here is a great refreshing remix of the Bloody Mary. The bright yellow color prompted me to call it a Sunny Day. I hope you enjoy a Sunny Day. Cheers.

Makes: 2 servings

Ingredients:
1 dry pint yellow grape tomatoes
1 celery rib
1 lemon fresh lemon juice
1/4 cup Castelvetrano olive brine, plus olives for serving
1/4 cup prepared horseradish
1 tablespoon hot sauce, preferably Louisiana Hot Sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon sugar
4 teaspoons seasoned salt
1 tsp freshly ground black pepper
1 tsp mild red pepper flakes
1 lemon wedge
4 ounces gin
10 ounces Clamato

Directions:
Blend yellow tomatoes and chopped celery in a blender until smooth, about 1 minute. Strain through a medium-mesh sieve into a large pitcher, pressing on solids to extract as much juice as possible. Whisk in lemon juice, olive brine, horseradish, hot sauce, Worcestershire sauce, sugar, and 2 teaspoons kosher salt. Taste and season with more salt if needed. Cover and chill at least 1 hour.

Combine black pepper, red pepper flakes, and seasoned salt in a shallow bowl.

To make each cocktail, rub the rim of a 12-oz. glass with a lemon wedge, then dip into spicy salt. Fill glass with ice and pour in 2 ounces gin and 2 ounces yellow tomato mix. Top with 5 ounces Clamato; garnish with yellow grape tomatoes, celery heart rib with leaves, French radish, olives, and a lemon wedge.
